
Dongding (凍頂), also spelled Tung-ting, is a famous oolong tea from Taiwan and also the name of the mountain on which the tea is grown. The original plants were brought from China's Wuyi Mountains in Fujian Province in the 18th century.
Defined by both the location of the tea gardens and the traditional oxidation (20-40%)/roasting (moderate) process, which both add favour and extend the ‘shelf life’, Dong Ding oolongs are well known for their honey and roasted grain aroma and the best a floral/fruity vivacity that continues long after drinking.
The Tea Catcher Dong Ding oolongs have been grown and processed in the traditional manner, without the use of irrigation or chemicals, and hand picked, sorted and roasted to reveal the best the teas have to offer. Two varieties are available as a small batch release-
In all honesty this tea took a while to hit it's straps. Gently aging has smoothed any rough edges and mellowed this tea into tasty and mellow brew. A nice introduction to the terrific terroir of Dong Ding.

About The Tea Catcher
1997-2001 The Tea Catcher lived, travelled, worked and studied in India, Nepal, Sri Lanka, Switzerland, Italy and the Czech Republic. During this time he drank much tea and visited tea growing regions.
2001-2009 Was spent mostly in Europe working with fine foods and olive oils in Italy, wine in Switzerland and tea in Prague. It was here in the cold winter months that The Tea Catcher passion was ignited. Much time was spent in the many tea rooms found all over the Czech Rep., drinking, learning and assisting, and also with Tea Mountain(.cz) as his business began and grew.
2010-today on return to Australia, The Tea Catcher seed, planted years ago, began its’ growth, leading to the purveyor of “the finest teas and accoutrements, sourced worldwide” that you see today. New teas, pots etc are constantly being chased, studied, sampled and ordered to bring the freshest, best and most interesting to you as soon as possible. Watch this space…..!
