
Long Jing aka "Dragon Well" is known as one of the Ten Great Chinese Teas.
This premium Dragon Well, was picked in spring in the heavily forested Jiande/Qing Tang county region, South-west of Hangzhou, Zhejiang, where the temperate, overcast and rainy winter climate contributes to the tenderness and sweetness of the buds.
The leaf is then flattened and toasted to further bring out the tea's unique characteristics, with slight sweet and bitter subtleties and the distinguished 'roasted chestnut' aroma which lasts through many infusions. (high in amino acids, vitamin C and catechins). A great and tasty entry to a classic Chinese tea.

Preparation-
1. Dragon Well tea is often brewed by using approximately 4 or 5 grams of tea for 250ml of water. Use water at about 80 degrees and infuse for 1 to 2 minutes before drinking. Once the water in the pot reaches halfway, pour more hot water and fill to the top, repeated several times, mostly retaining the original flavour of the tea.
2. Or use slightly cooler water (75 degrees) and shorter steeps in a more traditional method of filling and draining the pot.
Experimenting with quantity of leaf, amount of water and infusion times, to find your preferred strength of tea, is a lot of the fun and satisfaction in quality loose leaf teas. Enjoy...!

About The Tea Catcher
1997-2001 The Tea Catcher lived, travelled, worked and studied in India, Nepal, Sri Lanka, Switzerland, Italy and the Czech Republic. During this time he drank much tea and visited tea growing regions.
2001-2009 Was spent mostly in Europe working with fine foods and olive oils in Italy, wine in Switzerland and tea in Prague. It was here in the cold winter months that The Tea Catcher passion was ignited. Much time was spent in the many tea rooms found all over the Czech Rep., drinking, learning and assisting, and also with Tea Mountain(.cz) as his business began and grew.
2010-today on return to Australia, The Tea Catcher seed, planted years ago, began its’ growth, leading to the purveyor of “the finest teas and accoutrements, sourced worldwide” that you see today.
